31 And the Lord said, Simon, Simon, behold, Satan hath desired to have you, that he may sift you as wheat:
32 But I have prayed for thee, that thy faith fail not: and when thou art converted*, strengthen thy brethren.

*Converted-Greek-Epistrepho (Ep-ee-stref-o):To revert, come (go) again, convert, (re) turn (about, again.)

In this case, means a returning to the Lord.

Bible Answer:
Was Peter converted, more than once? No.
He was converted (Taking the Lord as the Son of God/ Saviour) to the Lord Jesus only once, for his confession was...

Matthew 16:13-17 KJV
13 When Jesus came into the coasts of Caesarea Philippi, He asked His disciples, saying, Whom do men say that I the Son of Man am?
14 And they said, Some say that thou art John the Baptist: some, Elias; and others, Jeremias, or one of the prophets.

Peter denied his Lord, he backslid, because he feared of his own capture.
But that was not the end of the story for , “he went out, and wept bitterly.”

Peter had sinned, but wept in repentance.
Christians are not perfect, they have and never will reach “perfect sanctification,” until they are united with their Lord.

I John 3:2 KJV
Beloved, now are we the sons of God, and it doth not yet appear what we shall be: but we know that, when He shall appear, we shall be like Him; for we shall see Him as He is.

When Christians make mistakes, and we repent (make about face) of our sins, God's grace keeps us.
